Gjetost is a type of Norwegian cheese, and the name translates to "Goat's cheese" But it isn't an ordinary goat cheese! It's made from a simmered, caramelized whey, and is part of a family of cheese caled Brunosts. Gjetost is frequently compared to fudge or caramel, but is very much an acquired taste. The caramel notes and richness of the cheese mean that apples are a perfect flavor pairing, and they look beautiful together, too!
